Next, slice your cucumbers into spears, chips, or both! I recommend placing the solid ingredients into the jar <em>before <\/em>stuffing the jar with cucumbers. You can even prepare a cute little jar just to bring on a picnic! Feel free to experiment with the ingredients.<\/p>\n\n\n\n<p>Brine:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00bc cups\u00a0distilled white vinegar (5% acidity)<\/li>\n\n\n\n<li>3 tablespoons\u00a0kosher salt<\/li>\n\n\n\n<li>2 tablespoons\u00a0sugar<\/li>\n\n\n\n<li>2 cups\u00a0cold water<\/li>\n\n\n\n<li>1\u00be to 2 pounds\u00a0Kirby cucumbers (about 6), cut into halves or spears<\/li>\n\n\n\n<li>2 tablespoons\u00a0coriander seeds<\/li>\n\n\n\n<li>6 large\u00a0garlic cloves, peeled and halved<\/li>\n\n\n\n<li>1 teaspoon\u00a0mustard seeds<\/li>\n\n\n\n<li>16 or so dill sprigs<\/li>\n<\/ul>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Combine the vinegar, salt and sugar in a small non-reactive saucepan (such as stainless steel, glass, ceramic or teflon) over high heat. Whisk until the salt and sugar are dissolved. Transfer the liquid into a bowl and whisk in the cold water. Refrigerate brine until ready to use.<\/li>\n\n\n\n<li>Stuff the cucumbers into two clean 1-quart jars. Add the coriander seeds, garlic cloves, mustard seeds, red pepper flakes, dill sprigs, and chilled brine into jars, dividing evenly. If necessary, add a bit of cold water to the jars until the brine covers the cucumbers. Cover and refrigerate about 24 hours, then serve.
