SCOTTISH OAT SCONES

  • 2/3 cup of butter or margarine, melted
  • 1/3 cup of milk
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 1 1/4 cups Quick Quaker Oats, uncooked
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (or fruit)

Combine all dry ingredients then add butter, milk and egg. Mix until just moistened. Stir in chocolate chips or fruit. Shape the dough into a ball and pat out into a circle on a floured surface. Slice into wedges and bake on a greased cookie sheet at 425 F for 12 or 15 minutes, or until lightly golden brown. Great for breakfast, second breakfast, and afternoon tea!
